A pochi chilometri dalla tenuta, negli stessi territori dell\u2019Olgiatese, si trovano gli allevamenti, gli orti e i frutteti (dal mirtilleto al noccioleto) dell\u2019agriturismo, dai quali proviene una percentuale consistente di quanto viene servito in tavola, come prodotti freschi o trasformati in conserve, succhi e digestivi (nonch\u00e9 la base per i prodotti cosmetici della spa). Tra i primi piatti troviamo il riso, in inverno nel classico abbinamento con la zucca (ma la provola e la liquirizia accennano nuovamente al Sud), i tortelli ripieni e i golosissimi gnocchi di patate pensati per incontrare tutti i palati (senza uova n\u00e9 farina). Non manca la cotoletta di vitello alla milanese, anche se dagli allevamenti allo stato brado arrivano carni di ogni tipo (dalla faraona alla quaglia, al cappone), esaltate dalla tecnica di tradizione francese dello chef. Coregone, luccioperca e salmerino sono invece protagonisti dei piatti di pesce, rigorosamente di lago.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-2ca6ad5c elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"2ca6ad5c\" data-element_type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-100 elementor-top-column elementor-element elementor-element-51b34557\" data-id=\"51b34557\" data-element_type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-aa03bfc elementor-widget elementor-widget-text-editor\" data-id=\"aa03bfc\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>\u00a0 \u00a0 Ruberto, calabrese d\u2019origine, ma forte di una ventennale carriera nell\u2019h\u00f4tellerie svizzera, \u00e8 stato l\u2019ideatore del ristorante gourmet (una stella Michelin) dell\u2019Hotel Splendide Royal di Lugano, che, per meglio rappresentarlo, venne battezzato <em>I due Sud<\/em> (Calabria e Ticino uniti nella sua cucina). Lasciato dopo 18 anni il ruolo di executive chef sul lago Ceresio, porta il rigore e l\u2019organizzazione dello storico grand hotel dall\u2019altra parte del (vicinissimo) confine, per gestire a 360\u00b0 i servizi di ristorazione dell\u2019agriturismo in un ambiente altamente professionale ma certamente pi\u00f9 rilassato. Il filo conduttore \u00e8 il territorio, con le produzioni dell\u2019azienda agricola, ma non solo: il menu si allarga alle eccellenze dell\u2019intera regione, dal pesce di lago ai formaggi dei caseifici locali.
