L\u2019Amazzonia, oltretutto per via della sua straordinaria biodiversit\u00e0, offre un ventaglio di frutti, radici, piante, spezie e pesci davvero immenso che, come tale, molto bene si presta a nuove scoperte e infinite combinazioni. \u201cYachay\u201d, ha spiegato lo chef, <em>\u201c\u00e8 lo spirito creativo di <\/em>Mayta<em>, la cucina dietro la cucina. Grande attenzione viene riservata, come si conviene, anche all\u2019estetica del piatto. Le stoviglie a tavola diventano parte integrante della narrazione: ogni oggetto, rigorosamente in argilla, \u00e8 realizzato e modellato a mano.
